1. The Bread Knife: Beyond the Scalloped Edge

The standout feature of Tadafusa’s Bread Knife is its unique blade: it features a scalloped (serrated) edge only at the tip.

By initiating the cut with the serrated tip and sliding through with the straight edge, you can slice through bread smoothly without crushing it. The result is a clean surface with almost no crumbs. It is also perfect for slicing sandwiches and delicate cakes.

2. The Santoku: Your Go-To Multipurpose Knife

Capable of handling meat, fish, and vegetables, the Santoku is the most frequently used knife in the modern household. It is the true workhorse of the kitchen.

3. The Petty Knife: Compact and Perfectly Sized

The Petty Knife is ideal for detailed tasks like peeling fruit or cutting small vegetables. While many petty knives range from 80mm to 150mm, finding the right fit can be difficult.

This specific Petty Knife is designed to fit comfortably in a woman’s palm. Whether you're slicing fruit or cake at the table, it’s a tool chosen as much for its beautiful design as its utility.


The Craftsmanship of Tadafusa

Located in Sanjo City, Niigata Prefecture—a town famous for blacksmithing—Tadafusa collaborated with product designer Fumie Shibata to create these knives. Recognizing that kitchen knives are most often used by women, they focused on a design that is as aesthetically pleasing as it is functional.

  • Design Women Love: From the rustic texture of the chestnut wood to the soft, rounded silhouette of the handle, every detail has been thoughtfully considered.

  • Patented Antibacterial Carbonized Wood: The handles feature Tadafusa’s patented "Antibacterial Carbonized Wood." By heating chestnut wood in a kiln to a near-charcoal state, moisture and nutrients are removed, preventing bacterial growth and ensuring hygienic use. You can also enjoy the unique natural grain and color variations of the wood.

  • Superior Sharpness (SLD Steel): The blade features a three-layer construction, with a core of SLD Steel—known for being exceptionally sharp yet rust-resistant—sandwiched between stainless steel. It offers a professional-grade edge that surpasses standard all-stainless knives.

  • Universal Use: All knives are double-edged, making them suitable for both right-handed and left-handed users.

■ Care & Maintenance

  • Post-Use Care: After use, wash the entire knife thoroughly with warm water. Wipe off all moisture with a dry cloth before storing it in a safe place.

  • Handling Acidic/Salty Foods: Extra care should be taken after cutting foods with high salt or acid content (such as citrus, onions, or pickles). Please wash the blade immediately to maintain the steel's integrity.

  • Avoid Appliances: Do not use in dishwashers, dish dryers, microwaves, or ovens. Exposure to these appliances may cause the blade or handle to crack, warp, or sustain permanent damage.
